Eggless coconut cookies
Ingredients
- 2 cups All purpose flour
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Baking powder
- 1 pinch Salt
- 1.5 cup Unsweetend desiccated Coconut
- 1 cup Butter
- 1 cup Sugar
- 5 teaspoon Milk
- Few drops of Vanilla essence
Steps
- Gather the dry ingredients: flour, baking soda, salt and baking powder, along with the desiccated coconut.
- Have the sugar, butter, vanilla essence and milk ready. Sift the dry ingredients together.
- Crush any lumps left at the end with a spatula, if there are any, and set the sifted mixture aside. Put the butter and sugar in a mixing bowl.
- Cream the butter and sugar together, then add the desiccated coconut followed by the flour, vanilla essence and milk.
- Keep mixing until the dough is soft and well bound, without being sticky or runny.
- Shape the dough into logs, wrap it in plastic wrap and chill it in the refrigerator for 30 minutes. The dough performs best chilled: it is easier to handle, and chilling improves the cookies' flavour and texture.
- Prepare a baking tray by greasing it.
- Remove the chilled dough logs from the refrigerator and cut them into your desired shapes.
- Everything is ready, with baking now just a few minutes away.
- Give the cookies a 300 degree F bake for 15-20 minutes.
