Ingredients

  • 3 cups all-purpose flour
  • 2 cups sourdough starter
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 6 tablespoons cold salted butter
  • 1 cup milk, or more as needed

Steps

  1. Preheat the oven to 425 degrees F (220 degrees C). Butter a cast-iron skillet.
  2. Stir flour, sourdough starter, baking powder, and salt together in a large bowl. Grate in cold butter; stir until well combined. Add 1 cup milk; stir until just mixed. Add more milk if necessary until dough is sticky but not wet.
  3. Turn dough out onto a lightly floured surface; knead 3 to 4 times. Flatten out to a 1- to 2-inch thickness. Cut out 10 biscuits using a biscuit cutter; place into the prepared skillet.
  4. Bake in the preheated oven until golden brown, about 15 minutes.
