Ingredients

  • cooking spray
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) package cream cheese
  • 0.5 cup unsalted butter, softened
  • 1.5 cups confectioners' sugar
  • 1 teaspoon vanilla extract

Steps

  1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-baking dish with cooking spray.
  2. Mix flour, white sugar, baking soda, and salt in a large bowl and make a well in the center.
  3. Add eggs, crushed pineapple with juice, and vanilla; whisk until well-combined.
  4. Pour into the prepared baking dish.
  5. Bake in the preheated oven until top is deeply browned and a toothpick inserted into the center of the cake comes out clean, about 35 minutes. Let cake cool in the dish on a wire rack, 1 to 2 hours.
  6. To make the frosting: Combine cream cheese and butter for frosting in a mixing bowl; beat with an electric mixer until smooth, about 1 minute.
  7. Add confectioners' sugar and vanilla; beat until creamy, about 1 or 2 minutes more.
  8. Spread frosting on cooled cake.
  9. Serve and enjoy!
