Ingredients

  • 250 grams Dudhi/Bottle gourd
  • 1/4 cup curd
  • 1 tblsp oil
  • 1 tblsp chilli garlic ginger paste
  • 1 tblsp sesame seeds
  • 1 tblsp Cumin and carrom seeds
  • 1 tblsp jaggery
  • 1 tsp chilli powder
  • 1 tsp Coriander powder
  • 1 tsp turmeric powder
  • Salt to taste
  • 1/2 cup besan
  • 1.5 cup Wheat flour, or as needed
  • Oil for roasting thepla
  • Mango sweet pickle as required

Steps

  1. Wash and peel the dudhi, then grate it into a mixing bowl. Combine it with all the masala, oil and curd and mix thoroughly. Knead in the besan and wheat flour to form a soft dough. There is no need for added water, since the dudhi juice and curd provide enough for kneading. Cover the dough and leave it to rest for 10 minutes.
  2. After the rest, knead the dough once more and shape equal-sized balls. Use dry flour to help roll the thepla, then roast over a medium flame until brown marks appear.
  3. Repeat the same procedure for all the thepla. Cover them in a cotton cloth to keep them from drying, and enjoy them as you like.
