Ingredients

  • 1 (4 pound) sugar pumpkin

Steps

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Cut the pumpkin into several pieces that fit comfortably in the roasting pan. Remove the stringy pulp, reserving the edible seeds for roasting, if desired.
  3. Place cut pumpkin, skin-side up, in a large roasting pan. Add 1/4 inch of water.
  4. Bake in the preheated oven, uncovered, until the flesh is very soft and can be pierced easily with a fork or the tip of a knife, about 1 hour. Remove from the oven and let cool for 10 to 20 minutes.
  5. Cut the skin away from the cooled pumpkin pieces. Transfer the pumpkin flesh to a food processor and purée until smooth, or mash it in a bowl with a potato masher.
