Steps

  1. Heat 1 tablespoon of desi ghee in a pan or kadhai on medium heat.
  2. Add mustard seeds and cumin seeds. Let them crackle, then add a pinch of asafoetida and slit green chillies.
  3. Add the fresh curry leaves and let them splutter and become slightly crisp so their beautiful aroma infuses perfectly into the ghee.
  4. Turn the flame to low. Add turmeric powder, red chilli powder, and garam masala. Quickly add 2-3 tablespoons of water immediately so the spices don't burn and form a nice rich base.
  5. Add your leftover soft khichdi into this tempering. Mix everything gently until the spices are well incorporated.
  6. Cover with a lid and let it simmer on low heat for 2 minutes until it becomes piping hot.
  7. Turn off the stove. Your aromatic Curry Leaf Tadka Khichdi is ready!
