Ingredients

  • 🌸Dough:
  • 500 g strong bread flour
  • 7 g instant yeast (1 sachet)
  • 1 &1/2 Tbsp sugar
  • 1 & 1/2 tsp salt
  • 250 ml warm milk
  • 1 large egg
  • 50 g unsalted butter, softened
  • 🌸Filling/Topping:
  • 2 cups shredded chicken add salt & pepper to your taste
  • as needed Grated Cheddar cheese and Mozzarella cheese (half & half)
  • 1 egg beaten with 1 Tbsp milk (for egg wash)
  • Cream cheese or chilli sauce for drizzling (optional)

Steps

  1. Mix the flour, yeast, sugar and salt in a large bowl, then add warm milk and egg and combine to form rough dough. Work in the softened butter and knead for 8–10 minutes until smooth, stretchy and slightly tacky.
  2. Put the dough in a lightly oiled bowl, cover it and leave somewhere warm for about 1 hour, or until doubled.
  3. Punch the dough down and divide into 8–10 equal portions. Flatten each a little and put a tablespoon of grated cheese and shredded chicken in the center. Pinch the edges together to form a cylinder and set on a lined baking tray, seam-side down.
  4. Cover loosely and leave the buns to rise for 30–45 minutes, until puffy. Brush with egg wash, then cut a small slit in each top with a sharp knife. Add a little cheese on top and, optionally, drizzle chilli sauce or cream cheese before baking in the oven.
  5. Preheat to 190°C /170°C fan and bake for 15–20 minutes, until golden brown. If you wish, brush on a little melted butter straight after baking for an extra-soft crust.
  6. Serve warm with the cheese still melty, alongside soup, as sandwich buns or simply with butter.
