Ingredients

  • 2 cups white sugar
  • 0.5 cup milk
  • 0.5 cup margarine
  • 3 cups rolled oats
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsweetened cocoa powder
  • 0.5 cup flaked coconut

Steps

  1. Line two large baking sheets with waxed paper or parchment paper. Measure the oats, vanilla, cocoa, and coconut before beginning; sift the cocoa if lumpy.
  2. Combine sugar, milk, and margarine in a medium 3-quart saucepan over medium heat. Bring to a full rolling boil over medium heat. Once the mixture is boiling across the entire surface, cook for 2 minutes, stirring occasionally, until glossy and slightly thickened; an instant-read thermometer should register about 225 degrees F (107 degrees C). Remove from heat.
  3. Immediately stir in vanilla, then stir in cocoa until smooth. Add oats and coconut; stir until evenly coated.
  4. Working quickly, drop level tablespoonfuls onto the prepared baking sheets.
  5. Let cool at room temperature for at least 1 hour, or until set. Store in an airtight container.
