Caramel-Apple Crisp
Ingredients
- 1 1/4 cups all purpose flour
- 10 tablespoons sugar
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- 10 tablespoons (1 1/4 sticks) chilled unsalted butter, diced
- 1/2 cup sugar
- 1/4 cup (1/2 stick) unsalted butter, diced
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 6 Pippin or Golden Delicious apples (about 2 3/4 pounds), peeled, quartered, cored
- Lightly sweetened whipped cream
Steps
topping
- In a medium bowl, whisk the first 6 ingredients together. Add the butter and rub it in with your fingertips until small, moist clumps form. This can be prepared 1 day ahead; cover and chill.
filling
- Heat the oven to 375°F. In a large skillet over medium heat, stir sugar and butter until a smooth sauce forms. Add lemon juice and cook, stirring, until the caramel turns deep brown, about 5 minutes. Stir in salt, then apples, and toss until evenly coated, about 1 minute. Scrape the apples and caramel into a 13x9x2-inch glass baking dish and spread evenly. Scatter the topping evenly over them.
- Bake for about 50 minutes, until the apples are tender, the sauce bubbles thickly, and the topping is golden. Cool the crisp for 15 minutes and serve warm with whipped cream.
