Ingredients

  • 350 gr onions
  • 250 ml oil

Steps

  1. Peel off the thin and chewy layers of the onions. Wash and cut into halves.
  2. We need to cut thin slices of the onions. It is advisable to cut slices from the part where the layers of onions are joined. The reason is that when you cut that way, the joint of the layers get removed and hence it is easy to saperate the slices of the onions.
  3. Heat up oil and add all the slices at once. The level of the oil will look slightly below the onions. Fry on high heat till it starts to get slightly golden. Stir in between. Reduce the heat and ACT FAST FROM NOW ONWARDS. it will get light brown in just a minute or two. Drain them out of the oil when they look golden /light brown. It it gets dark, it will taste bitter. If it remains undercooked, it will not be crispy.
  4. Mine got slightly darker 🙈but thankfully it wasn't too late. The onion co tinjes to get cooked from its own heat even after removing it from the oil. So I spreader it in a plate so it gets cool faster and the cooking process stops.
  5. You can fill it in an airtight co trainer or a ziploc bag and store it in a freezer or use it fresh.
  6. I used barista in the veg mixture as well as in layers of Biriyani. The Biriyani was yummm. (recipe source of Biriyani is the same as mentioned in the story section. 200 gr rice & 200 gr mixed veg are enough for 3 people to eat as an only dish.
