  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 2 egg whites
  • 1 cup mashed bananas
  • 0.75 cup white sugar
  • 3 tablespoons vegetable oil

  2. Stir the flour, baking powder, baking soda and salt together in a large bowl.
  3. Whisk the egg whites in a medium bowl until they foam. Stir in the bananas, sugar, oil and lemon zest, then add the flour mixture and stir just until combined. Stir in the walnuts. Fill each prepared muffin cup 2/3 full.
