Ingredients
- 2 cups all purpouse flour
- 1/2 cup unsalted butter (cold & cut into cubes)
- 1/2 teaspoon salt
- 2.5 teaspoons baking powder
- 1.5 teaspoons cinnamon powder
- 1/4 teaspoon ginger powder
- 1/4 teaspoon nutmeg powder
- 1/4 cup light brown sugar
- 1/4 cup granulated white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- 1/4 cup applesauce (unsweetened)
- 1.25 cup chopped apples (I did not peel them, you may do so)
To sprinkle
- turbinado sugar
- heavy cream (to brush on top.)
Method
- In a bowl whisk together all purpose flour, cinnamon powder, nutmeg powder and ginger powder. Add the baking powder and whisk.
- Now add both the sugars and whisk to combine. Set aside.
- In another measuring jar or bowl, whisk together egg and vanilla extract.
- Add in the heavy cream and unsweetened apple sauce and whisk to combine. Set aside.
- Now take cubed cold butter out of the refrigerator and add it to the flour mix.
- Cut in the butter using a pastry cutter or two forks till the mixture resembles coarse crumbs.
- Add in the liquid mix to the flour mix and also add the chopped apples.
- Mix everything together. Dump it onto a floured surface (the dough will be sticky) and work with your hands to bring it together in form of a 8 inch circle.
- Using a sharp knife cut the circle into 8 triangles. Brush each triangle with heavy cream and sprinkle turbinado sugar on top.
- Bake the scones at 400 F degrees for 20-25 minutes. Enjoy warm apple salted caramel scones with coffee!
