Ingredients

  • 2 cups all purpouse flour
  • 1/2 cup unsalted butter (cold & cut into cubes)
  • 1/2 teaspoon salt
  • 2.5 teaspoons baking powder
  • 1.5 teaspoons cinnamon powder
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon nutmeg powder
  • 1/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1/4 cup applesauce (unsweetened)
  • 1.25 cup chopped apples (I did not peel them, you may do so)

To sprinkle

  • turbinado sugar
  • heavy cream (to brush on top.)

Method

  1. In a bowl whisk together all purpose flour, cinnamon powder, nutmeg powder and ginger powder. Add the baking powder and whisk.
  2. Now add both the sugars and whisk to combine. Set aside.
  3. In another measuring jar or bowl, whisk together egg and vanilla extract.
  4. Add in the heavy cream and unsweetened apple sauce and whisk to combine. Set aside.
  5. Now take cubed cold butter out of the refrigerator and add it to the flour mix.
  6. Cut in the butter using a pastry cutter or two forks till the mixture resembles coarse crumbs.
  7. Add in the liquid mix to the flour mix and also add the chopped apples.
  8. Mix everything together. Dump it onto a floured surface (the dough will be sticky) and work with your hands to bring it together in form of a 8 inch circle.
  9. Using a sharp knife cut the circle into 8 triangles. Brush each triangle with heavy cream and sprinkle turbinado sugar on top.
  10. Bake the scones at 400 F degrees for 20-25 minutes. Enjoy warm apple salted caramel scones with coffee!
