Ingredients

  • 1.5 pounds potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 1 (4 to 6 pound) whole roasting chicken
  • 6 cloves garlic, halved lengthwise
  • freshly cracked salt and pepper to taste
  • 2 tablespoons rosemary

Steps

  1. Place potatoes into a slow cooker; top with onion.
  2. Pat chicken dry with paper towels. Make 4 deep slits on each side of chicken and 1 deep slit in each leg. Press 1 garlic half deep into each slit; place remaining 2 garlic halves in cavity.
  3. Season cavity with salt and black pepper. Generously season outside chicken with 1 tablespoon rosemary, salt, and black pepper. Place chicken, breast-side up, into the slow cooker. Sprinkle with remaining 1 tablespoon rosemary; season with salt, and black pepper.
  4. Cover slow cooker. Cook on Low until an instant-read thermometer inserted into thickest part of the chicken breast, near but not touching bone, reaches at least 165 degrees F (74 degrees C), 8 to 10 hours. Serve chicken with potatoes and onions.
