Ingredients

  • 1 sitafal
  • 6 cup milk
  • few kesar / saffron
  • ½ cup condensed milk
  • 2 tbsp nuts, chopped

Steps

  1. Start with 1 sitafal and collect the pulp, making sure you take out the seeds.
  2. Heat 6 cup milk in a large kadai, then add a little kesar.
  3. Keep stirring as you bring the milk to a boil.
  4. When the milk reaches a boil, move the cream onto the sides of the kadai so it sticks there.
  5. Keep the milk simmering and boiling until only half is left.
  6. Stir in ½ cup condensed milk and mix it through well.
  7. Keep boiling until the milk thickens completely, making sure you keep sticking the cream to the sides.
  8. Scrape all that cream from the sides back into the milk and mix it in well (that's what helps make the rabdi creamy).
  9. Let the rabdi cool completely before you add the sitafal pulp, then mix it in well.
  10. Mix in a few chopped nuts too.
  11. For the finish, top the chilled Sitafal Rabdi with kesar and nuts, and enjoy.
