Idiyappam recipe | idiyappam in hindi | nool puttu | Kerala style idiyappam with rice flour
Ingredients
- 1 cup rice flour / akki hittu
- 1 1/4 cups water
- Salt, to taste
- 1 tsp oil
Steps
- Dry-roast the rice flour for 2 minutes over low heat. Set aside until completely cool.
- While the flour cools, put 1¼ cups water in a pan.
- Add the salt along with the oil.
- Bring the water to a boil after stirring it thoroughly.
- Add the roasted rice flour after lowering the flame further.
- Mix without stopping until it forms a dough.
- After switching off the flame, cover the dough and rest it for 5 minutes.
- With wet hands, knead and mix the dough together.
- Take care, because the dough will be very hot.
- Fit the noodle mould into the chakli maker.
- Prevent the dough from sticking to the mould by greasing the chakli maker with some oil.
- Shape the dough into a cylinder and put it into the maker. Keep the rest covered so it does not harden.
- Begin making the idiyappam once the lid is tightened.
- Press the dough out in a circular motion onto a greased idli plate.
- Steam for 10 minutes.
- Accompany the idiyappam with tomato kurma or sweet coconut milk and finish with coconut oil on top.
