Ingredients

  • 1 cup Split green gram dal (moong dal)
  • 1 cup Curd (yogurt)
  • 1 tsp Mustard seeds
  • 8 leaves Curry leaves
  • 1 tsp Eno fruit salt
  • 1 tsp Oil (for tadka)
  • 1/2 tsp Salt
  • 1/2 cup Mixed chopped vegetables (carrot, capsicum, beans, etc.)
  • 1 tsp Oil (for greasing moulds)

Steps

  1. Use a wet napkin to wipe the moong dal. Roast until crisp, let cool, then grind and sieve to obtain flour.
  2. Leave the moong dal flour to soak in curd for 1-2 hours. Add chopped vegetables to the batter if desired.
  3. Prepare the tadka by heating the oil and adding mustard seeds and curry leaves. Mix it into the batter with the salt. Gently mix in the Eno just before steaming.
  4. Grease the idli moulds with oil and pour in the batter. Steam for 12-15 minutes, check doneness, and remove from the heat.
  5. Serve the soft, spongy moong dal flour idlis with coconut chutney or sambhar.
