Fluffiest Blueberry Pancakes
Ingredients
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons melted butter
- 1 + cup fresh blueberries
- more butter for the pan
Steps
- To make the “buttermilk,” combine the milk and vinegar and leave them to stand for a minute or two.
- Make a dry mixture by whisking the dry ingredients together, then whisk the egg, the milk mixture and melted butter into it just until combined.
- Let a nonstick pan heat over medium heat, then melt a little smear of butter in it. The butter is essential for the golden brown crust.
- Pour about 1/3 cup of the fairly thick batter into the hot skillet and flatten it by spreading it out. Set a few blueberries on the upper surface. Continue cooking until little bubbles form on top and the edges begin to firm up. Turn it over, then cook for a further 1-2 minutes until the pancakes are very tall, fluffy and cooked all the way through.
- Serve them with butter and maple syrup, or enjoy them plain as the author sometimes prefers.
