Veg Schezwan Fried Rice
Ingredients
- 1.5 cup basmati rice
- 4 cup water
- Salt as per taste
- 1 tsp oil
- 2 tbsp oil
- 1 tsp finely chopped ginger
- 8-10 finely chopped garlic cloves
- 1 medium size finely chopped onion
- 1 medium size finely chopped carrot
- 1/2 cup finely chopped french beans
- 1 small size finely chopped green capsicum
- 1/2 finely chopped red capsicum
- 1/2 finely chopped yellow capsicum
- 1/2 cup finely chopped cabbage
- 1/2 tsp salt
- 1 pouch chings schezwan fried rice masala
- Green coriander leaves as per required
- Onion rings as per required
Steps
- After cleaning the basmati rice, soak it in clean water for 20 minutes.
- Heat the water in a pan, then add the soaked rice, salt and oil. Cook over a medium flame until 90% done. Put the cooked rice into a bowl, drain away all the water, then transfer it to a large plate to cool.
- Leftover rice is another option, or cook the rice in advance and use it a few hours later.
- Heat oil in a pan and sauté the finely chopped garlic and ginger. Add the finely chopped onion and french beans and sauté for a while over a high flame.
- Add the finely chopped bell peppers, carrot and cabbage, sautéing over a high flame. Keep the vegetables slightly crunchy rather than cooking them too much. Mix in the cooked rice thoroughly.
- Mix in the Chings masala and salt; no other spices or sauces are needed. Cook for some time over a medium flame, then switch off.
- The vegetable Schezwan fried rice is ready. Garnish with green coriander leaves and onion rings and serve.
