Mutton Stew
Ingredients
- 750 grams mutton
- 300 grams onion
- 2 pods garlic
- 3 tbsp coriander powder
- 4-6 dry red chillies
- 4-6 cloves
- 4 green cardamom
- 1 black cardamom
- 1/4 mace
- 8-10 peppercorns
- 2 inch cinnamon stick
- 1 tsp cumin seeds
- Salt to taste
- 1/2 cup cooking oil
Steps
- Drain the mutton after washing it, then cut the onions into slices and remove the garlic cloves' skins.
- Put oil in a pressure cooker and heat it. Add all the whole spices except the garlic, and wait for them to crackle.
- Sauté the sliced onion in the cooker until light golden.
- Put in the mutton and cook until its liquid has dried up.
- Follow with the garlic cloves and coriander powder, and sauté for 2 minutes. Pour in 250 ml water, add salt and let the water boil.
- Cook under pressure over medium heat for 6-7 minutes, then allow the pressure to release on its own.
- If any liquid is left, let it cook off and sauté for 3-4 minutes over medium heat.
- Turn off the heat and leave for 5 minutes; the mutton stew is then ready to serve.
