Ingredients

  • 4 cups full-fat milk
  • 200 grams paneer shredded, (about 2 cups)
  • ½ cup sugar
  • few saffron strands
  • ½ teaspoon cardamom powder
  • 2-3 tablespoons nuts (pistachios & almonds)

Steps

  1. Wash the paneer thoroughly under water, grate with a box grater and set aside. A block of paneer weighing 200 grams was used here. If using homemade paneer, crumble it.
  2. Heat 1 liter full-fat milk over medium heat in a heavy-bottomed pan. Once boiling, reduce to low and simmer about 10 minutes, stirring at regular intervals to prevent milk burning on the bottom.
  3. Add sugar and saffron and stir well until the sugar dissolves. Saffron may be skipped if you do not want it. Cook another 3-4 minutes until the kheer thickens slightly.
  4. Add grated paneer or chenna and cook for 2-3 minutes.
  5. Stir in cardamom powder and nuts and mix thoroughly. Take off the stove; it thickens further as it cools. Serve warm or chilled.
