Steps
Stovetop Pressure Cooker Method
- Peel 2 medium beetroots and cut into small cubes, giving 2 cups diced beetroot.
- Put ¼ cup fresh or frozen grated coconut, 6-8 cashew nuts, 1-inch cinnamon stick, 1-2 cloves, 1 cardamom, ½ teaspoon optional saunf and ¼ cup water, or as needed, in a blender. Grind to a smooth paste.
- In a pressure cooker, heat 1-2 tablespoons oil. Saute ½ teaspoon cumin seeds and 1 sprig curry leaves for a few seconds, then saute 1 medium finely chopped onion, about 1 cup, until lightly browned.
- Saute 1 tablespoon ginger-garlic paste for 30 seconds, then add 1 medium finely chopped tomato, about ½ cup, and cook until soft.
- Saute 2 cups chopped beetroot and ½ cup green peas for 1 minute. Mix in coconut-cashew paste, 1 teaspoon red chili powder, 1 teaspoon coriander powder, ½-1 teaspoon garam masala, salt and 1 cup water or as needed well. Close the lid and cook over medium flame for 2-3 whistles, then allow pressure to release naturally.
- Mix in 1 tablespoon lemon juice and garnish with 2 tablespoons coriander leaves, mixing well.
- The beetroot coconut curry is ready; serve hot with pooris, chapatis, roti or parathas.
Instant Pot Instructions
- For the Instant Pot, follow the stovetop pressure-cooker steps, close the lid and set the valve to Sealing. Cook at High Pressure for 5 minutes, then allow a Natural Pressure Release (NPR). Keep the remaining steps the same.
