Eggless Chocolate Chip Cookies
Ingredients
- 1 cup unsalted butter, softened
- 0.75 cup brown sugar
- 0.25 cup white sugar
- 0.5 (5.1 ounce) package instant vanilla pudding mix
- 1 teaspoon vanilla extract, or more to taste
- 2 tablespoons milk
- 1.5 tablespoons vinegar
- 1.5 teaspoons baking powder
- 2.25 cups all-purpose flour
- 1 teaspoon baking soda
- 1 pinch salt
- 1.5 cups semi-sweet chocolate chips
Steps
- Set the oven to preheat at 375 degrees F (190 degrees C) and grease 2 cookie sheets.
- In a large bowl, beat the butter, both sugars, pudding mix and vanilla together with an electric mixer until smooth and creamy.
- Whisk the milk, vinegar and baking powder in a small bowl to a froth.
- Mix the milk-vinegar mixture into the butter mixture, then work in the flour, baking soda and salt until dough forms. Stir the chocolate chips through it.
- Shape the dough into round balls with a cookie scoop and drop them onto the prepared sheets. Press down slightly if you prefer flatter cookies.
- Bake in the preheated oven for 8 to 10 minutes, until light brown. Cool briefly on the sheets, then move to a wire rack to cool completely.
