Sugar Syrup Recipe:
- For the syrup, take 1½ cup sugar with ¼ cup water.
- Stir until the sugar dissolves completely.
- Boil to a 1 string consistency.
- Flavour with 1/4 tsp cardamom powder and 1 tsp lemon juice; the juice prevents the syrup from crystallizing.

Khaja Preparation Recipe:
- Put 1 cup all purpose flour in a large bowl and add 2 tbsp ghee.
- Crumble the mixture into a well-moistened dough.
- Pour in ¼ cup water and knead for 5 minutes.
- Add water as required while kneading to a smooth, soft dough.
- Oil the dough, cover and leave for 15 minutes.

- Dust the dough with flour and roll out with a rolling pin.
- Roll as thinly as possible, then dust.
- Trim the sides into a large square or rectangle.
- From one side, begin rolling tightly.
- Dust a flour layer on each roll to prevent them sticking together.
- When you reach the end, brush the corner with water and finish rolling. Water helps keep it from unravelling during frying.
- Roll the cylinder tightly to eliminate air gaps.
- Cut into 1-inch pieces, or choose another size if preferred.
- Use your finger to flatten each piece slightly without disturbing the layers.
- Start frying the khaja in oil that is medium hot.
- Fry over a low flame for about 3 minutes.
- Continue frying over a medium flame until crisp and golden.
- Drain excess oil on kitchen paper.
- Without delay, drop the fried khaja into the hot sugar syrup.
- Leave in the syrup to soak for 5 minutes.
