Ingredients

  • 1 cup Basmati rice
  • 1/4 cup carrots diced
  • 1/4 cup beans diced
  • 1/4 cup peas
  • 1/4 cup corn
  • 1 medium potato diced
  • 1 medium onion sliced
  • 1 tbsp ginger garlic paste
  • 1-2 chopped green chillies
  • 2 tbsp oil
  • 1 tsp salt or to taste
  • 2 cups water
  • 1 tbsp lemon juice
  • 1 tbsp chopped coriander leaves for garnish
  • 1/2 tsp cumin seeds (jeera)
  • 1 bay leaf
  • 2 black cardamom
  • 6 green cardamom
  • 1 inch piece of cinnamon
  • 5 cloves
  • 5 peppercorns
  • 1 pc mace

Steps

  1. To begin, wash the basmati rice well in water and soak it for 30 minutes.
  2. To prepare the pulao, heat oil in a pan. Add in the whole spices – bay leaf, cumin seeds, green cardamoms, black cardamoms, cinnamon, cloves, peppercorns, and mace. Mix and allow to crackle.
  3. Next, add the sliced onions with green chillies. Saute until the onions are translucent.
  4. Add the ginger garlic paste and saute for a minute.
  5. Add in the vegetables. Saute for a few minutes.
  6. Add the drained rice and mix gently.
  7. Next, add the water with salt and lemon juice. Mix well. Cover with a lid and cook until the rice is done. Or pressure cook it for three whistles like I have and allow the pressure to drop.
  8. Once the rice is done, let it rest for a few minutes and then fluff it up a bit.
  9. The One-Pot Vegetable Pulao in Pressure Cooker is ready to serve. Garnish with coriander leaves. Serve hot with dahi tadka.
