Steps

  1. First, add 10-12 saffron strands to a cup of warm milk. This will give a nice yellow-orange color.
  2. Now wash the rice and soak it for 1 hour. Heat enough ghee in a pan and fry the cashews and almonds in it until they turn golden brown and remove them in a plate. Now in the same pan, add cloves, cinnamon, cardamom and saute the soaked rice in it.
  3. Now add the fresh coconut and fry again.
  4. Bring two cups of water and half of milk to a boil over medium heat. Pour the boiled milk and water over the rice and mix well. Pour the entire mixture into the cooker vessel. Add the saffron milk and cook for 3 whistles.
  5. Cool the cooked rice. Now heat a pan, add sugar and enough water to submerge the sugar and cook for two minutes upto 1 string chasni. Add the prepared rice to this mixture and mix well.
  6. This is how your delicious coconut rice is ready! While serving this rice, garnish it with cashew nuts, pistachios, cardamom powder and saffron strands. You can enjoy this coconut rice hot or cold as per your preference.
