Raw Apple Cake

Ingredients

  • 0.75 cup vegetable oil
  • 2 large eggs
  • 3 cups finely chopped Granny Smith apples
  • 2.5 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 (8 ounce) package cream cheese, softened
  • 1 tablespoon milk, or more as needed
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2.5 cups confectioners' sugar

Steps

  1. Preheat the oven to 350 degrees F(175 degrees C). Grease and flour a 9×13-inch baking pan.
  2. Whisk oil and eggs together in a bowl. Place apples in a separate bowl: pour oil mixture over top.
  3. Meanwhile, whisk flour, white sugar, baking soda, 1 teaspoon salt, cinnamon, and nutmeg together in a separate bowl; fold into apple mixture until batter is thick but well combined. Pour into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted into center comes out clean, about 45 minutes. Cool, about 30 minutes.
  5. Beat cream cheese, 1 tablespoon milk, vanilla extract, and 1 pinch salt in a bowl until well combined; gradually beat in confectioners' sugar until smooth. Beat in more milk, if needed, 1 tablespoon at a time, until reaches desired consistency.
  6. Spread cream cheese frosting over cooled cake.
